I am currently obsessed with peanut butter, and the combination of chocolate and peanut butter is an absolute winner!
RECIPE
INGREDIENTS
BOTTOM PEANUT BUTTER LAYER
- 1/4 cup coconut oil
- 1/2 cup natural peanut butter
- 1/2 tsp vanilla extract
- 1 tbsp pure maple syrup
- Good pinch of salt, depending how salty your peanut butter is
TOP CHOCOLATE LAYER
- 1/4 cup coconut oil
- 1/3 cup natural peanut butter
- 1/4 cup cacao powder
- 1/4 tsp vanilla extract
- 1 tbsp pure maple syrup
- good pinch of salt
- Cacao nibs to top
METHOD
Using a good food processor, blend together all ingredients for the peanut butter layer until well combined.
Pour the mixture half way up a cupcake mould (either silicon or paper would work fine). Continue to fill up moulds until you use up all the mixture. Place the moulds in the freezer to firm up while you prepare the chocolate layer.
Next, blend together all ingredients for the chocolate layer. Once solid, remove the half-filled moulds from the freezer, and top up with chocolate mixture.
Top with a sprinkle of cacao nibs and place back in the freezer to completely harden.
Keep stored in a plastic container in the fridge or freezer.
