Breakfast is definitely my favourite meal of the day-I would probably eat it for every meal if I could! I am one of those people who go to bed slightly excited at the thought of what I might eat for breakfast the next morning…is that sad??? Anyway, I have a particular soft spot for porridge and bircher muesli, and am always up for trying out different combos. Any recommendations for the best porridge/bircher you have had?

INGREDIENTS
- 1/4 cup quinoa flakes
- 1 tbsp chia seeds
- 1 cup water
- 1/4 cup almond milk (or milk of choice)
- 1/4 tsp vanilla extract
- 1 small apple, grated, for topping
- Buckwheat grouts, for topping
- Pumpkin seeds, for topping
- Sunflower seeds, for topping
- Natural yogurt, for topping
- Cinnamon, for topping
METHOD
Combine the quinoa flakes, chia seeds and water in a small pot over low heat. Stir continuously until the water has been soaked up. Add in milk and vanilla and continue to stir until desired consistency is reached.
Pour into a bowl and top with grated apple, a handful of seeds, a good dollop of yogurt and a sprinkle of cinnamon. Enjoy!
