Apple, Cinnamon and Coconut Teff Loaf




  • 1 cup brown teff flour
  • 3/4 cup almond meal
  • 1/2 cup shredded coconut, plus extra for topping
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon, plus extra for topping
  • 2 eggs
  • 1 cup milk of choice
  • 2 tbsp honey
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 cup of apples, chopped into small pieces
  • Pinch of salt


Preheat the oven to 180 degrees C and line a loaf tin with baking paper.

In a bowl, add the eggs, milk, honey, coconut oil and mix together well. Add in the dry ingredients and mix until well combined. Stir through the chopped apple and pour into the prepared tin. Top with a sprinkle of coconut and cinnamon.

Place in the oven for about 50 minutes or until cooked through.
