Crunchy Granola

A good granola is incredibly versatile. Combine in a bowl with some milk, yogurt and fruit for a winning breakfast, sprinkle on porridge or banana ice cream for a bit of crunch, or I have even been known to eat by the handful directly from the jar! WARNING: A high level of self control is required, as this recipe is super addictive!

RECIPE

INGREDIENTS

  • 1/2 cup buckwheat grouts
  • 1/2 cup sunflowers seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup shredded coconut
  • 1/2 almonds, roughly chopped
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup flaxseeds
  • 3 tbsp coconut oil
  • 1 tbsp honey
  • 2 tsp vanilla
  • Sprinkle of cinnamon and nutmeg

METHOD

Preheat the oven to 200 C and line a tray with baking paper.

Mix all the dry ingredients together in a big bowl. Add the wet ingredients and stir through, making sure everything is evenly coated.

Spread the mixture out evenly on the lined tray, and place in the oven for around 15 minutes or until golden and smelling delightful! Make sure you keep an eye on it so it doesn’t burn, and give it a little stir occasionally so everything gets even heat.

Store in an airtight jar in the pantry, and see how long it can last!
