ANZAC Biscuits



  • 1 cup rolled oats
  • 1/2 cup almond meal
  • 1/2 cup desiccated coconut
  • 3 tbsp shredded coconut
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp bi carb soda (baking soda)
  • Pinch of salt

Preheat the oven to 180 degrees C and line a baking tray with paper.

Mix all ingredients in a bowl until well combined. Spoon out a large tablespoon of the mixture onto the baking tray and press flat to form a biscuit shape. Continue with the rest of the mix (make sure there is a bit of space in between each biscuit, you may need two trays).

Bake in the oven for around 15 minutes until golden. Leave to cool and firm up before eating. These biscuits will be the hard and crumbly variety.

Makes around 8 biscuits, depending on size.
