Maple Bacon Nut Clusters

RECIPE

INGREDIENTS

  • 3 cups whole mixed nuts
  • 3 rashes short cut bacon, cut into small pieces
  • 1 egg white
  • 2 tbsp sesame seeds
  • 3 tbsp maple syrup
  • Tbsp cinnamon
  • A few good pinches of flaked sea salt

METHOD

Preheat the oven to 160 degrees C and line a baking tray with paper.

In a small frying pan, cook the bacon pieces for a couple of minutes until about half cooked (they will continue to cook in the oven). Set aside.

Using an electric beater, whip the egg white in a large bowl for about 30 seconds until fluffy. Carefully stir through the mixed nuts, bacon pieces, sesame seeds, maple syrup, cinnamon and salt until everything is well coated.

Spread onto the baking tray, keeping some of the nuts clumped together, and place in the oven for around 25 minutes or until the nuts have a nice colour. Remove and let cool. The egg white should create some nice clusters! Store nuts in an airtight jar or container.
